This week’s Bite is a beautifully scored and grilled North Carolina catfish from the specials menu at Baan Sawan. Chef Alex Suaudom says he likes to go to the seafood market and hand-select each fish for his weekly specials, picking only the ones that make the cut. Which is to say, the catch of the day later this week may be another type of fish entirely, but have no doubt, it will be special. Chef Suaudom serves the fish bone-in for maximum flavor, plating it with jasmine rice and a green curry, available Northern style as a broth or Central style, with coconut milk, as shown here. Also not to be missed on the current specials board: New Zealand farm-raised camel, ground and skillet browned, and served with broad noodles in a musky, Indian-inspired yellow curry with notes of 1120 Washington St, Columbia, SC 29201 cumin and coriander.
