Breweries have a lot of governmental red tape to deal with before they can even begin ripping open the first packages of hops or yeasts, and given that, Swamp Cabbage Brewing Company is doing a little celebrating. The newest brewery to come on to the rapidly growing Midlands scene received its licenses and passed the final state inspection in the past week.
“Receiving our licenses [is] the last major hurdle for us as we prepare to brew,” says co-founder Ed Boyd.
They will begin to brew their first test batch soon, and will set an opening date based on how well that process goes.
